SERVES 4
Green Salad
1 large Romaine lettuce
15-20 fresh leaves mixed salad greens
1/2 bunch parsley, roughly chopped
1 Avocado, peeled and choppped
1 cucumber, sliced thinly
1 tin organic chickpeas (rinsed and drained)
Basil Dressing
Hanful of fresh basil
1/2 cup extra virgin olive oil
1-2 garlic cloves – crushed
1/2 tsp wholegrain mustard
11/2 Tbs apple cider vinegar
1-2 tsp apple juice concentrate
Wash all salad leaves well, making sure to remove all the dirt/sand. Drain and dry well.
To make the dressing, put the dressing ingrediants into a blender in the order listed until smooth.
Put all salad ingrediants into a bowl, toss gently, drizzle with dressing and serve.
