Vegetable Fritters
3 zucchinis
1/2 carrot
3 organic eggs
1/2 c self raising spelt flour
1/2 tsp sea salt
Freshly ground black pepper
Olive oil for frying
Mixed salad greens
Homemade Tzatziki
1 small cucumber diced
1 1/2 cups thick Greek yoghurt plain or natural Vaalia yoghurt
2 tsp lemon juice
1 clove crushed garlic
large handful of fresh mint – finely sliced
Freshly fround black pepper
1. To make the Tzatziki, place all the ingrediants in a bowl and stir until combines. Chill until required.
2. Coarsely grate the zucchini and drain off any excess water. Coarsely grate the carrot, and finely chop the onion.
3. Beat the eggs and flour together in a large mixing bowl. Add the vegetables, salt and pepper and mix thoroughly.
4. Heat some olive oil in a large frying pan and drop in 1/4 cup of the fritter mixyure. Fry for two minutes on either side until golden brown.
5. Transfer fritter to a baking dish lined with baking paper and keep warm in the oven. Repeat with the remaining mixture.
6. Serve the warm fritters with chilled tzatziki and a fresh salad of mixed greens.
